Many of you have suggested cookbooks and recipes. Thank you! As I come across good finds, I will share them. However, I am more of an off-the-cuff cook, and exposure to my friend who is a professional chef - caterer has only improved my skills in the kitchen. I would say that what I ate today is reflective of my general preferences:
Big bowl of hot oatmeal with almonds, walnuts, raisins and a sliced banana. I skipped my green tea because I was running late for a meeting.
Soy chai. It was tasty, but soy is something I am supposed to avoid for allergy reasons, so I must take it in moderation.
Beans and rice (cheating style): I cooked brown jasmine rice on the stove top. I opened and rinsed a can of black beans. When the rice was done, I tossed in the beans and half a jar of Frog Ranch mild salsa. Stir until blended. Tada! It’s not exactly cooking, but fast and nutritious.
Sautéed mushrooms and kale with sesame-ginger dressing.
Later on, I just might have a hot apple cider. I like mine with a splash of orange juice. And whiskey. Perfect for a single-digit night with howling wind!
