½ onion (yellow, white or red), chopped
1 clove garlic, finely chopped (more if you love garlic)
1 TBS olive oil
Dash / pinch of :
Cinnamon (go easy)
Ginger (dried or fresh)
Red pepper flakes
2 cups peeled, cored and diced butternut squash (about 1/2)
2 cans chickpeas, drained
1 can diced tomatoes
1 zucchini, diced
1 carrot, diced
1. Saute onion and garlic in some olive oil.
2. Add spices.
3. Cook 1-2 min over med heat.
4. Add remaining ingredients, cover and simmer for about 15 min.
